The Coach House Salad

Ingredients:


2 Cl Garlic, peeled and cut
3 tb Red wine vinegar
1/2 ts Oregano
Sliced
1 c Peeled and thinly
1/3 c Crumbled feta cheese

12 Black olives (greek or
And chopped
4 Fresh scallions, cleaned
3 Ripe tomatoes, cubed
Bite-size pieces
Washed and cut into
2 Heads boston or romaine lett
1/2 c Light olive oil
1 tb Chopped parsley

Method:


Sharp and aromatic.
Crisp.
1.
Sprinkle the amount of salt you desire for your salad in a large wooden bowl.
Rub the garlic halves vigorously against the bowl for one minute.
Discard what is left of the garlic.

Combine the lettuce, tomatoes, scallions, olives, cheese, cucumber and oregano.
Add the vinegar and parsley and toss.
Add the olive oil and pepper and toss again.
Serve immediately.
