Potato Creole

Ingredients:

Vegetable oil
3
Potatoes; peeled and sliced
1
Onion; sliced
2
c
Tomatoes; chopped
Salt and freshly ground
Black pepper to taste

Dried thyme
Pinch cayenne pepper
Method:
Heat the oil in a large skillet on medium heat.
Add the potatoes and onion and saute for 10 minutes.
Add the tomatoes, salt, pepper, thyme and cayenne.
Bring to a boil, then reduce the heat, cover and simmer for 30 minutes, or until the potatoes are tender and the sauce has thickened.
