Pork Sweet Potato And Apple Casserole

Cored, sliced apples

Apple juice

Cooked, peeled, sliced sweet

Cubed, cooked pork butt or
-shoulder

Allspice
1/2
ts
Cinnamon

Cornstarch

Cold water
Method:
Combine apples and apple juice in a 2-quart pan, simmer, covered, for 5 minutes at medium heat.
Set aside.
Layer sweet potatoes in bottom of 3 quart casserole, then add a layer of pork.
Sprinkle allspice over pork.
Remove apples and layer over pork.
Sprinkle cinnamon over apples.
Dissolve cornstarch in cold water and add to apple juice.
Simmer on low heat until thickened, stirring constantly.
Pour evenly over apples.
Bak, uncovered, for 30 minutes at 350 degrees (F).
Yield: 6 servings.
