Bell peppers
(about 1/2 pound)
Method:
When shopping, look for well-shaped, shiny, bright-colored peppers.
2 MEDIUM (ABOUT 1/2 POUND) YIELD 4 SERVINGS; 25 CALORIES PER SERVING.
To Prepare: Wash peppers; remove stems, seeds and membranes.
Leave whole to stuff and bake, or cut into thin slices or rings.
To Saute: Heat 1 to 2 tablespoons margarine or butter in 10-inch skillet over medium-high heat.
Saute slices or rings in margarine 3 to 5 minutes or until crisp-tend Steam: Place steamer basket in 1/2 inch water (water should not touch bottom of basket).
Place peppers in basket.
Cover tightly and heat to boiling; reduce heat.
Steam 8 to 10 minutes or until tender.
To Microwave Place peppers in 1-1/2-quart microwavable casserole.
Cover tightly and microwave on high 4 to 5 minutes, stirring after 2 minutes, until crisp-tender.
Let stand covered 1 minute; drain.
