Method:
Soak pigtail and scald.
Put cow heel to cook until tender.
Put cut beef into pieces, remove large bones from cow heel, cut pig tail in serving sized pieces, and add cassereep, pepper and sliced onions.
Cook until very tender, add pork.
Season to taste, add sugar.
Leave to stand for about four hours, reheat and serve.
