Mushroom Quiche

Pastry, 9"

Onion; chopped

Mushrooms, fresh; sliced

Oil, olive

Eggs; beaten

Evaporated milk

Sour cream

ts
Nutmeg, ground

ts
Salt

ts
Pepper
1/2
lb
Cheese, Swiss; diced

Flour, all-purpose
Method:
Line a 9" quiche dish or piepan with pastry; trim excess pastry around edges.
Prick bottom and sides of quiche shell with a fork; bake at 425 degrees for 6 to 8 minutes.
Let cool on rack.
Saute onion and mushrooms in olive oil until tender.
Combine next 6 ingredients in a large bowl; stir well.
Combine cheese and flour; add to egg mixture.
Stir in onion and mushrooms.
Pour into pastry shell, and bake at 350 degrees for 45 minutes or until set.
