Italian White Beans

2 1/2 c Water
3/4 c Dried great northern beans*
1/2 c Chopped drained marinated
Sun-dried tomatoes
1/4 c Sliced ripe olives
1 tb Chopped fresh or 1 ts Dried
basil leaves
1 tb Olive or vegetable oil
1 Cl Garlic, crushed

Method:


*substitute: 2 can (15 ounces each) great Northern beans, rinsed and drained Heat water and beans to boiling in 2-quart saucepan.
Boil uncovered 2 minutes; reduce heat.
Cover and simmer about 45 minutes, stirring occasionally, until beans are tender (do not boil or beans will burst); drain.
Stir in remaining ingredients.
Cook and stir until mixture is hot.
6 SERVINGS (1/2 CUP EACH); 160 CALORIES PER SERVING.
