California Steamed Vegetable Pudding

Butter, softened

Soda

ts
Cloves

ts
Nutmeg
Method:
Rinds of 2 large oranges, grated Mix all ingredients well.
Place in 2 well buttered 1 lb molds.
Tie waxed paper cover over molds, and put on rack in the steaming kettle.
Fill with water half way up the side of the molds.
Put lid on kettle, bring to a boil.
Steam 3 hours.
Serve with hot rum sauce.
Hot Rum Sauce 1 cup light brown sugar 1 cup corn syrup 4 tbsp butter 1/4 tsp salt 1 cup light cream 4 tbsp rum Mix sugar and syrup in a small saucepan, bring to a boil and cook over medium heat for 5 minutes.
Add butter, salt and cream.
Add rum just before serving.
Makes 3 cups.
