Ingredients:

Strained chicken broth

Turtle meat

tb
Chicken fat

Chopped onion

Parsley

Thin slices bacon
Salt & pepper to taste
Method:
Prepare rich chicken broth with salt only.
Strain.
Cut turtle meat in small dice.
Brown slowly in chicken fat.
Add chopped onion; saute until onion is tender.
Add meat, onion, seasonings and any fat to chicken broth.
Bring to a boil and simmer for 10 minutes.
Serve with parsley sprinkled on each bowful and a paper-thin slice of lemon floated on top.
