Spicy Shrimp Omelet

Ingredients:


2 tb Peanut or vegetable oil
2 French omelets
2 ts Soy sauce
1/2 c Fully cooked small shrimp
1/4 c Shredded carrot
Beans
1/4 c Thin diagonal slices green
1 Cl Garlic, finely chopped
pepper
1 1/8 To 1/4 ts Crushed red
1/2 ts Curry powder
(about 1/4 cup)
1 sm Onion, chopped
2 ts Chopped fresh cilantro

Method:


Heat oil in 8-inch skillet or omelet pan over medium heat.
Cook onion, curry powder, red pepper and garlic in oil about 2 minutes, stirring occasionally.
Add green beans and carrot.
Cook and stir 2 minutes.
Stir in shrimp and soy sauce.
Heat until hot.
Keep warm.
Prepare French Omelets - except before folding, fill each with about 1/2 cup shrimp mixture.
Sprinkle with cilantro.
2 SERVINGS; 480 CALORIES PER SERVING.
