Spicy Shrimp Omelet

Peanut or vegetable oil

French omelets

Soy sauce

Fully cooked small shrimp

Shredded carrot
Beans

Thin diagonal slices green

Cl Garlic, finely chopped

Curry powder
(about 1/4 cup)

Onion, chopped

Chopped fresh cilantro
Method:
Heat oil in 8-inch skillet or omelet pan over medium heat.
Cook onion, curry powder, red pepper and garlic in oil about 2 minutes, stirring occasionally.
Add green beans and carrot.
Cook and stir 2 minutes.
Stir in shrimp and soy sauce.
Heat until hot.
Keep warm.
Prepare French Omelets - except before folding, fill each with about 1/2 cup shrimp mixture.
Sprinkle with cilantro.
