Millet Pilaf

Serves:

Ingredients:


4 sl Bacon
1 md Unpared apple, coarsely
1/8 ts Ground ginger
Bouillon granules
1 tb Chicken
3 c Water
1 c Uncooked millet
(about 1 cup)
1 md Green bell pepper, chopped
1 md Onion, thinly sliced
Chopped (about 1 cup)

Method:


Cook bacon in 10-inch skillet until crisp.
Remove bacon with slotted spoon, reserving fat in skillet.
Crumble bacon and reserve.
Cook and stir onion, bell pepper and millet in fat about 5 minutes or until onion is crisp-tender.
Stir in water, bouillon granules and ginger.
Heat to boiling; reduce heat.
Cover and simmer about 30 minutes or until millet is tender.
Stir in apple and heat until hot.
Sprinkle with reserved bacon.
6 SERVINGS (ABOUT 3/4 CUP EACH); 145 CALORIES PER SERVING.
