Horseradish Encrusted Salmon

Salmon filets, about 6-oz ea

c
Cornbread or corn muffin
Crumbs

Stems fresh thyme, picked
And minced
Zest of 1 orange, minced
1
T
Or 2 finely grated fresh
Horseradish

Salt
1/2
T
Melted butter, plus extra
For brushing salmon
Method:
Heat oven to 475F.
Combine dry ingredients, adjusting amount of horseradish to taste.
Stir in butter.
Place salmon on a parchment-lined or lightly oiled baking sheet.
Brush with reserved butter and pat 1/4 of crumb mixture on each filet.
Bake in center of oven for 8 to 12 minutes.
Crust should be lightly browned with salmon just cooked through.
