Deep Fried Fish

Vegetable oil or shortening

Pound lean fish fillets,
About 3/4-inch thick

All-purpose flour

Eggs, slightly beaten

Dry bread crumbs
Method:
For most even cooking, don't fry too many pieces of fish at the same.
Heat oil (2 to 3 inches) in deep fryer or Dutch oven to 375 degrees.
If fish fillets are large, cut into 8 serving pieces.
Mix flour, salt and pepper.
Coat fish with flour mixture.
Dip into eggs, then coat with bread crumbs.
Fry a few pieces at a time about three minutes or until fish flakes easily with a fork and is deep golden brown.
Drain on paper towels.
