Apricot Snowballs

Dried apricot halves

Water

Sugar

Butter

Vanilla

Chopped almonds

Shredded coconut
Method:
Cook apricots in water until soft.
Add sugar, salt and butter.
Cook to soft ball stage, 234 to 236-degrees.
Add vanilla; cool to lukewarm stage.
Add almonds; beat until thick and creamy.
Drop by teaspoonfuls into coconut.
Cool on waxed paper.
Yield: 18 pieces.
