Apricot Snow

(1 lb) dried apricots
250
g
(1 cup) honey
3
Stiffly beaten egg whites
Method:
Puree soaked apricots and honey.
Fold in egg whites.
Pour into greased mold or refrigerator tray and freeze.
Serve frozen, but break up into bite-size pieces.
Garnish with whipped cream and/or sliced bananas.
