Method:
Cool potatoes completely in the fridge or better leave to stand overnight.
Mix in the diced vegetables.
Whisk together the oil with the spices & herbs.
Ensure it is well blended.
Pour over potatoes & toss gently.
Refrigerate till ready to be served.
