Chinaberry Salad

Cooked chicken, diced

Celery, chopped

Pineapple tidbits, drained

(1lb) chinese vegetables,

Scallions, sliced
Lettuce, or cabbage leaves

Cranberry sauce (jellied or
-whole berry)

Prepared low-calorie Italian
-style dressing
Method:
In a large bowl, mix chicken, celery, pineapple, chinese vegetables and scallions.
Spoon mixture innto salad bowl lined with lettuce leaves.
In a small bowl, combine cranberry sauce and dressing until smooth and well blended.
Pour over salad and toss gently to coat all pieces.
Makes 8 serving.
