Cannelini Salad

Can canelini beans, drained
Salt & pepper to taste

Nicoise olives, pitted &

Fresh sage leaves, chopped

Fresh rosemary, minced

Garlic cloves, minced

Fresh parsley, chopped
Juice of 1 lemon
Grated zest of 1 lemon

Leaves butter lettuce
Method:
Combine all ingredients in a bowl except lettuce.
Toss well & chill for at least an hour, preferably overnight.
To serve, place a scoop of bean salad in each lettuce leaf.
