Brown Rice Salad

Serves:

Ingredients:


1/2 c Uncooked brown rice
Sliced (about 1 tablespoon)
1 Green onion (with top), thin
(about 1 cup)
1 sm Cucumber, chopped
1 Cl Garlic, crushed
1/8 ts Crushed red pepper
2 tb Lemon juice
3 tb Olive or vegetable oil
1/2 c Cashew pieces

Method:


Cook rice as directed on package.
Mix oil, lemon juice, red pepper and garlic.
Stir cucumber, onion and oil mixture into rice.
Cover and refrigerate about 3 hours or until chilled.
Stir in cashews.
4 SERVINGS; 280 CALORIES PER SERVING.
