Black Bean & Rice Salad (thomas)
Ingredients:

Cooked or canned black beans
-- (rinse & drained canned)

Cooked rice
1 1/2
c
Fresh cilantro
1/4
c
Lime juice
3/4
c
Oil
1/2
c
Chopped onion

Garlic cloves; crushed
Salt
Freshly ground black pepper
Method:
Mix the beans, rice, and cilantro together in a bowl.
Place the lime juice in a small bowl and whisk in the oil.
Add the onion and garlic and toss with the rice and beans.
Add salt and pepper to taste.
