White Chili With Chicken

Large White Beans

Chicken Broth

Cloves Garlic, Minced

Cooked Diced Chicken Breast

Grated Monterey Jack Cheese
Salsa
Sour Cream
Method:
Combine beans, broth, garlic and half of the onions in a large soup pot.
Bring to a boil.
Reduce heat, simmer until beans are soft (3 hours or more), adding more broth if necessary.
In a skillet, saute remaining onions in oil until tender.
Add chiles and seasonings, mix thoroughly.
Add to bean mixture.
Add chicken and simmer for 1 hour.
Serve topped with grated cheese, salsa and sour cream.
Salsa: You can use store bought or make your own using Peeled tomatos, green chiles, onion, garlic and fresh cilantro.
