Smoked Pork Chops And Orange Dressing

Ingredients:


2 Smoked pork chops, 1/2 inch
-thick
3 tb Butter, divided
1/4 c Thinly sliced celery
2 tb Finely chopped onion
2 tb Finely chopped parsley
1/4 c Coarsely chopped walnuts
1 c Pkg seasoned croutons
1 lg Orange
1 ts Grated orange peel
1/4 ts Freshly ground pepper

Method:


1.
Brown pork chops on both sides in a hot skillet.
Place in an ungreased 9x9x2-inch square baking dish.

Add 2 Tbsp butter to pan drippings and melt.
Add celery, onion and parsley and saute 2 to 3 minutes or until slightly softened.
Stir in walnuts.
Add remaining Tbsp butter and melt, then stir in croutons, orange peel and pepper.
Remove from heat.

Remove and discard remaining peel from orange.
Slice orange and set aside 4 large slices from middle of orange and chop the remaining into bite-size pieces.
Add pieces of orange to dressing mixture.

Place an orange slice over each pork chop then spoon dressing over pork chops.
Place remaining orange slices on top.
Cover with foil.
Bake in preheated 350-degree oven for 30 minutes or until chops are fork tender.
Menu suggestions: Steamed buttered broccoli and tossed green salad.
