Roast Pork And Tatters
Ingredients:

Pork loin roast

Sage (ground)

Garlic powder

Potatoes, cut in wedges
Method:
In a small bowl mix sage and garlic powder, plus 1 ts salt and 1/4 ts pepper.
Rub on roast.
Place on rack in shallow roasting pan.
Roast in pre-heated 325 F oven for 1 hour.
Add potatoes.
Baste with pan drippings.
Roast 1 to 1 1/2 hours longer, basting potatoes occasionally, until potatoes are tender and meat thermometer, inserted in centre of roast, registers 170 F.
Let stand 10 minutes before slicing.
