Chicken With Eggplant

Eggplant, peeled and cubed

Onions, chopped

Clove garlic, minced

Flour

Chicken broth

Red wine
Method:
Servings: 6 Preparation: In casserole, heat oil and brown chicken; season if you like.
Remove.
Into remaining fat, stir eggplant, onion, and garlic; cook, covered, for 10 minutes, stirring frequently.
Add oil whenever needed.
Stir in flour, add broth and win and cook, stirring, until mixture thickens.
Replace chicken.
Bake, covered, at 350 degrees for 1 hour, or until chicken is tender.
Serve with: Pasta of some sort Mixed green salad
