Chicken Florentine

Serves:

Ingredients:


1/2 c Onion, chopped
1 ea Garlic, clove
1 tb Margarine
2 tb Cornstarch
13 3/4 oz Chicken broth, (College Inn)
1/4 ts Basil leaves, dried
1/2 c Cheese, mozzarella, shredded
1 1/2 c Chicken, cooked, strips
4 oz Spinach, fresh, chopped
1 c Tomatoes, cherry, halved
1 x Pasta

Method:


In large skillet, over medium heat, cook onion and garlic in margarine until tender, about 5 minutes.
Stir in cornstarch; mix in broth and basil.
Cook and stir until mixture boils and thickens; stir in cheese until melted.
Add chicken, spinach and tomatoes; cover and cook 1 minute or until heated through.
Serve over hot cooked pasta if desired.
