Broiled Lemon Chicken
Ingredients:

3- to 3-1/2-pound broiler-fr
Chicken, cut into quarters

Lemon, cut in half

Margarine or butter,
Melted
Method:
Fold wing tips across back side of chicken quarters.
Set oven control on broil.
Cut lemon in half.
Rub and squeeze lemon over chicken.
Brush with 2 tablespoons margarine or butter.
Mix salt, paprika and pepper.
Sprinkle over chicken.
Place chicken, skin sides down, on rack in broiler pan.
Place broiler pan so top of chicken is 7 to 9 inches from heat.
Broil 30 minutes.
Turn chicken and brush with 1 tablespoon margarine.
Broil 15 to 25 minutes longer or until chicken is brown and juices run clear.
6 SERVINGS; 280 CALORIES PER SERVING.
To Grill: Cover and grill chicken, bone sides down, 5 to 6 inches from medium coals 40 to 60 minutes, turning and brushing with margarine, until juices run clear.
