Brine For Roasted Chicken

Brown sugar

Garlic; crushed

Bay leaves

Black peppercorns

Jalapenos; split & seeded

Dried basil

Dried oregano

Dried thyme

Water
Method:
Place all ingredients together in a container large enough to hold a whole chicken and mix them well.
Rinse a whole roasting chicken, making sure to remove the giblets and any other loose parts from the cavity.
Submerge the chicken in the brine for 18 to 24 hours, refrigerated.
Roast according to your favorite or usual methods.
