Ricotta & Vegetable Pasta

Ricotta cheese
Garlic mustard

Leeks, cleaned and sliced

Olive oil

Scallions, chopped
Into matchstick size

Crookneck squash, cut
Cut into matchstick size

Carrots, scrubbed and

Freshly grated parmesan che
Method:
Ricotta and vegetable matchstick pasta.
Heat olive oil and saute carrots over medium heat for 5 minutes.
Add squash and scallions and saute for 3 more minutes.
Cook pasta until al dente.
Drain and return to pot.
Toss with ricotta cheese, half-and-half mustard and sauteed vegetables.
Heat quickly to warm.
Serve topped with freshly grated Parmesan.
