Vegetable Meat Loaf
Ingredients:

Pounds ground beef, pork and

Worcestershire sauce

Carrot, coarsely shredded

(4 ounces) mushroom stems

Tomato, thinly sliced

Bread, torn to small pieces*

Processed american cheese
Method:
Heat oven to 350 degrees.
Mix all ingredients except tomato and cheese.
Spread mixture in loaf pan, 9 X 5 X 3 inches.
Bake 1 to 1-1/4 hours or until done; drain.
Arrange tomato down center of meat loaf.
Top with cheese slices cut diagonally in half.
Bake 3 to 5 minutes or until cheese is melted.
Remove from pan.
6 SERVINGS; 375 CALORIES PER SERVING.
*1/2 cup dry bread crumbs or 3/4 cup quick-cooking oats can be substituted for the 3 slices bread.
