Pizza Pockets

Ricotta cheese

Grated mozzarella cheese

Medium tomato

Droied oregano

Ready made pizza dough

Flour for dusting
Method:
: Preheat oven to 450 degrees/ Combine ricotta cheese,: mozzarella cheese and oregano in bowl and blend with: kitchen spoon.
Set aside.
Run tomato under cold water and: pat dry with paper towel.
Cut out core.
Cut tomato into: slices, then chop into small squares.
Add tomatoes to: ricotta cheese mixture and blend with spoon.
Set bowl: aside.
Tear each ham slice into 5-6 pieces, set aside.
: Pinch off pieces of pizza dough about the size of a golf: ball and place on lightly floured surface.
Flatten: slightly.
Using flour and rolling pin, roll out to about 1/: 4 inch thick.
Sprinkle 4-5 pieces of ham ontop of dough.
: Spoon about 1 heaping T of ricotta filling into: center of dough circle.
FOld dough over so edges meet.
: Pinch edges together.
Place on baking pan.
Continue making: pizza pockets with remaining dough and filling.
Bake in: oven for 15-20 minutes.
Remove from oven and let stand and: cool for 10 minutes.
Keep and excess cooked in: refrigerator or freezer and can be rewarmed.
