Harris' Country Pate

Serves:

Ingredients:


2 lb Sweetbreads
To taste
Salt and white pepper,
1/4 c Chopped pistachio nuts
Pinch of mace
1/4 ts Nutmeg
1/2 cn Jellied consomme
1/2 c Soft butter
1/2 c Chopped black olives
1 Jigger brandy
1/2 c Sherry
1/2 c Heavy cream
1/2 lb Braunschweiger
1 Lemon
Melba toast

Method:


This is a very light pate.
1.
Boil the sweetbreads in acidulated water (water that has juice of 1 lemon).
Boil until tender.
Remove membranes and chill the sweetbreads.
2.
Place the rest of the ingredients in a blender and process until of smooth consistency.
Pack in small serving crocks.
3.
Spread on melba toast for individual servings.
