Chopped black olives

Jigger brandy

Sherry

Heavy cream

Melba toast
Method:
This is a very light pate.
1.
Boil the sweetbreads in acidulated water (water that has juice of 1 lemon).
Boil until tender.
Remove membranes and chill the sweetbreads.
2.
Place the rest of the ingredients in a blender and process until of smooth consistency.
Pack in small serving crocks.
3.
Spread on melba toast for individual servings.
