From your butcher.

Coriander seeds, ground
Salt

Paprika

Garlic cloves, chopped
Ground pepper
Red pepper flakes
Cayenne pepper
Cumin
Oregano
Cloves

Red wine vinegar
Method:
If you've got a meat grinder or a food processor, you can make some pretty decent chorizo without the casing.
Cut the meat and fat into cubes.
Toast coriander seeds and grind them.
Add the coriander to the pork.
Add salt, paprika, garlic cloves, freshly ground pepper, some red pepper flakes or cayenne pepper, a bit of cumin, some oregano and just a touch of ground cloves.
Throw in a few tablespoons of red wine vinegar.
Run this through a food processor or meat grinder.
Take a small bit and fry it to taste for seasoning.
Add whatever it needs.
This makes about 5 lbs.
of sausage and is great for Chorizo con Huevos.
