Method:

5 lbs Medium Ground Pork 1 Tbs Salt 2 Tbs Sage 2 tsp Freshly Ground Pepper 1 tsp Ground Cloves 2 tsp Ground Mace 2 tsp Coriander 1 whole Nutmeg, grated 1 cup Water Combine all ingredients, mix well and stuff into sheep casing or make into patties.
