Smoked Bacon Cheese Burgers

1/2 c Hardwood chips
1 Basic burger recipe
4 Bacon strips
4 Slices smoked cheese (smoked
-Mozzarella or Gouda)
3 tb Mustard, whole-grain

Method:


While you heat up the grill, place the wood chips in a bowl and cover with water.
Soak for 25 minutes.
Drain.
Scatter the chips over the hot coals, and wait until they start smoking before cooking the burgers.
Meanwhile, prepare the burgers according to their recipe, wrapping each one with a strip of bacon before grilling.
Secure the ends of the bacon with a toothpick.
To intensify the smoky flavor, cover the grill during cooking.
A minute before the burgers are done, remove the toothpick and top each burger with a slice of cheese.
Cook until the cheese melts.
Spread the insides of the bun with mustard before serving.
