Method:
Heat oven to 425 degrees.
Prepare Poached Eggs - except cook 3 minutes; drain thoroughly.
Roll pastry into rectangle, 18 X 10 inches, on lightly floured surface.
Cut into 4 rectangles, 10 X 4-1/2 inches.
Layer spinach, ham, mustard, egg and cheese on one end of each rectangle to within 1/2-inch of edge.
Fold pastry over cheese.
Fold edges of pastry, pinching firmly to seal.
Bake 15 minutes or until pastry is puffed and deep golden brown.
