Cheese Meat Loaf Pinwheel

Serves:

Ingredients:


1 pk (10oz) spinach
1/4 c Butter
1 c Sliced mushrooms
1/2 c Chopped onions
1/4 c Chopped parsley
1/2 c Fine dry bread crumbs
1 Egg
1/2 ts Salt
1 pn Each pepper, and nutmeg.
MEAT MIXTURE:
1 lb Medium ground beef
1/2 lb Lean ground pork
1 c Shredded cheddar cheese
1/2 c Fine dry bread crumbs
1 Egg, beaten
2 ts Worcestershire sauce
3/4 ts Salt
1/4 ts Pepper

Method:


** %%%%% CHEESE MEAT LOAF PINWHEEL %%%%% ** SPINACH MUSHROOM FILLING: SPINACH-MUSHROOM FILLING: Steam spinach until tender; refresh with cold water, drain and squeeze out excess moisture.
Chop coarsely and set aside.
In skillet, melt butter; cook mushrooms and onions over medium heat until onions are transparent.
Transfer to bowl.
Add spinach, parsley, bread crumbs, egg, salt, pepper and nutmeg; mix well.
MEAT MIXTURE: Combine beef, pork, cheese, bread crumbs, eggs, worcestershire sauce, salt and pepper.
Place meat mixture between two sheets of waxed paper and roll into rectangle about 18 x 8 inches.
Remove top sheet.
Spread spinach mixture evenly over meat, leaving 1/2 inch border.
Roll up meat from short end.
Ease in 9 x 5 inch loaf pan.
Bake in 350 oven for about 1 hour or until browned and juices run clear.
Transfer to serving platter and serve hot or cold.
Makes about 6 servings.
**NOTE** I have used ground chicken instead of the beef.
Also added lots more spices, ginger, garlic, barbeque sauce etc to the meat mixture.
It is great served cold with potato salad for a picnic!! One is never enough for our family.
