Method:
Makes 6 Servings Simple coffe-flavored gelatins such as this were considered quite elegant desserts at the turn of the century.
This is a dessert that was serverd on a showboat that traveled from the head of Allegheny River down the Ohio to the Mississippi.
The calliope was the musical steam whistle, perched on top of excursion boats, that was played on a keyboard tp announce the arrival of the steamships.
Soften the gelatin in the cold coffee.
Stir in the hot coffee and sugar, until gelatin and sugar are disolved.
Allow to cool.
Pour into 6 small, individual molds and refrigerate 2 to 4 hours, until set.
Unmold onto individual serving plates.
To serve, top with sweetened whipped cream.
