Tartar Of Smoked Salmon On Rye Barquette

Ingredients:


1 lb Smoked salmon minced by hand
1 tb Capers
Juice of 1 lemon only
1 ts Minced onion
1 Egg white
1/2 ts Fresh chives finely
chopped
30 Barquettes-boat shaped
pastry

Method:


MIx well minced salmon, capers, lemon juice, onion, egg white and chives and portion into 30 equal parts.
Top barquettes and serve.
If barquettes are not available, use round 1 inch croutons or similar cracker as base.
