Rice And Endive Soup
Ingredients:

Uncooked rice

Chopped fresh basil

Chopped fresh parsley

Head curly endive, chopped
- tomatoes, crushed
- or 28 oz can whole plum

Ripe plum tomatoes, chopped,

Vegetable stock

Olive oil
- half moons

Carrots, peeled & cut into

Celery stalks, sliced

Chopepd onions
Salt & pepper
Method:
Cook the rice.
Meanwhile, saute the onions, celery & carrots in the olive oil till tender.
Add the stock & tomatoes & endive.
Simer for about 15 minutes.
Stir in the cooked rice.
Add parsley & basil.
Season with salt & pepper to taste.
