Powter Polenta

Ingredients:

Cornmeal

Nature's seasonings
1/2
ts
Pepper
Oil

Chopped Italian parsley
Method:
Combine cornmeal with 1 1/2c water and seasonings.
Gradually add mixture to 3c rapidly boiling water, stirring constantly, for about 3 minutes.
It will be heavy and sticky.
Turn heat to very low and cook 10 minutes more, stirring occasionally.
Pour into a loaf pan sprayed with nonstick spray.
Chill thoroughly.
Cut into 1/2 inch thick slices.
Fry in a nonstick pan sprayed lightly with oil, until browned on both sides.
Serve with parsley sprinkled on top.
