Curried Coconut Chicken Balls

Flaked coconut

Cream cheese, at room

Mayonnaise

Chopped cooked chicken

Chopped walnuts

Minced onion

Curry powder, to taste

Method:
1.
Preheat oven to 350°.
Spread out coconut on a small baking sheet & toast in oven until lightly brown, 12 1/2 minutes.
Let cool slightly.
2.
In a small bowl, blend together cream cheese & mayonnaise until smooth.
Add chicken, walnuts, onion, curry powder & salt.
Mix well.
3.
Form chicken mixture into 1" balls.
Roll in toasted coconut to coat.
Cover & refrigerate until chilled.
