Couscous With Basil

Ingredients:

Reduced sodium chicken broth
OR
Vegetable broth

ts
Finely shredded orange peel
1
ts
Finely shredded lemon peel
1
ts
Finely shredded lime peel
1
c
Couscous
1/2
c
Chopped dried apricots
1/4
c
Chopped and loosely
Packed FRESH basil
Method:
In medium saucepan, combine broth and orange, lemon and lime peels.
Bring to a boil.
Stir in the couscous and apricots.
Cover and remove from the heat.
Let stand for 5 to 8 minutes or until the liquid is absorbed.
Add basil and toss with a fork.
